- 1 cauliflower
- 3 onions
- 3-4 carrots
- 2 handfuls of quinoa (rice, buckwheat)
- 1 bunch of fresh garlic
- Seasonings to taste (salt, oil)
- 1 bunch of dill
This vegan soup is also called cauliflower cream soup, and beside being one of the most delicious meals for vegans, the soup can be consumed by everyone.
You should start the preparation of this soup by chopping the cauliflower as the main ingredient in the soup, and then put the pieces in the oven. Bake them in a pan until it turns pink. Together with the cauliflower you should bake the carrots, chopped on bigger pieces.
The second thing that should be done is to put the baked cauliflowers in a saucepan that was previously filled with boiling water. The amount of water should be enough to cover the vegetable. The next vegetable that you will include in the soup is onion and some garlic cloves. Let the cauliflowers soften and then add some red pepper, and black one if you like. Add some salt and one half of finely chopped dill, and a bit of cold-pressed oil. If you like your soup even healthier.
You can put some quinoa into the soup, before you start boiling the whole mixture. The time for boiling is around 15 minutes, more or less.
Our advice is to add some balsamic vinegar into the vegan soup for better taste and aroma. You can add vinegar as a replacement for lemon or if it’s your preference.
